Curry Mayo

Unfortunately (or not), there's no real story to go along with this recipe. I think it's a fairly common condiment, but the first time I had it was at the fry shop Pommes Frites, outside the Comedy Cellar in NYC. And it was delicious!

That's about it for my history with curry mayo. Although, that same night, my wife and I did have the pleasure of watching both Dave Attell and Dave Chapelle drop in for surprise sets at the Cellar. So maybe that has something to do with my fond memory of this simple dip.

Recipe Notes

-Use whatever mayo you have on hand, or make your own if you're an overachiever (gotta get that recipe on here!).
-Use whatever curry powder you have. Madras is probably going to be the most common one you'll see here in the states, but I tend to keep
S&B on hand for making Japanese Curry, plus I like the can.


Curry Mayo

Yields about a 1/2c

  • 100g Mayonnaise
  • 5g Curry Powder
  • 5g Lime Juice
  • 1g Salt
  1. combine all ingredients and whisk to combine.
  2. if you have time, allow to sit for 30 minutes then mix again before using.
